My Maple Carrot Parnsip Mash
Stolen from my mother! This is what I made today:2 lb carrots
1 3/4 1b parsnips (depending on which flavour you like more, you can tweak the ratio)
2-3 tbs butter or margarine
1/4 cup milk
1/4 cup maple syrup (REAL maple syrup--not Aunt Jemima or golden syrup!!)
Boil carrots for 5 minutes. Add parsnips and boil a further 5 minutes. Drain. Add butter and milk to pot, mash carrots and parsnips. Add maple syrup. Put everything in a food processor and process until desired consistency.
Season with salt, pepper, and more maple syrup to taste. Enjoy!

I may be silly but I have no idea what parsnips are! I've heard of them but what are they?
In response to your question - I haven't finished reading 90 Minutes in Heaven just yet, but so far...I really like it. I want to believe his vision of heaven, but I have to say I'm skeptical. But then I think "What does he possibly have to gain by saying he saw heaven? he's already famous from the accident and his miraculous recovery?" I do know I couldn't endure all that pain. That is crazy. so far, it's really good, and though his description of heaven is amazing, and beautiful and brought tears to my eyes and would so be something to look forward to...I'm skeptical. Guess I'll find out when I get there!
April, that's pretty much how I feel too :)
Oh--and parsnips are a sweet root vegetable. They're yellow-white and shaped like a carrot but fatter.
